If I had to pick a favorite holiday it would definitely be Thanksgiving Day. Not only because of the delicious food, but its also the start of the holiday season (Xmas decorating time!), there are tons of leftovers, I get to eat my favorite pie…Pumpkin and its a little more relaxed than the hustle and bustle of Christmas. It also allows me to remember what I am thankful for and take a little break from the everyday stresses of life.
This year we had a TON of food mostly all gluten-free. For appetizers we started out with a cheese board which included crackers, olives, maple glazed pecans, homemade Parmesan crisps and different jams.
To start off the meal, we had butternut squash soup topped with cardamon and pumpkin seeds. For the main course we had turkey and sides which included mashed potatoes, carrots and greens beans, stuffing both GF and regular and spiced sweet potato bread. My contribution this year was GF stuffing and Cranberry Sauce. The stuffing was super easy to make and turned out delicious. I used GF baguettes which I toasted in the oven for about 40 minutes until they had a crouton like texture. Meanwhile I sauteed celery and onions in some butter until soft and seasoned with some salt and pepper. Once the bread had cooled I added it to the celery mixture and mixed together until coated evenly. I added chicken broth with fresh parsley and sage, a little more salt and pepper and mixed together again. I placed in a baking dish, covered with tin foil and cooked for about 45 minutes and then another 10 minutes with foil removed to get it crispy on top.
Lastly for dessert there were so many choices two of which were gluten free. Since my mom and I are the only gluten free people we opted to order pies instead of making them this year. I ordered a GF pumpkin pie from Whole Foods which was good. Very flavorful and the crust was great and held together very well. My mom ordered a Squash pie from True Food Kitchen which never disappoints.
All in all it was a very good Thanksgiving and the food was absolutely delicious.
