Eventually I get bored of making the same meals week after week, and for some reason when its grocery shopping day I can never think of new things to make. I try and plan ahead so that I have a meal plan for the upcoming week, but I feel like it never works out the way I want it to. I always seem to go back to the usual things like tacos, pasta and chili. I’m not a huge fish fan and we don’t really eat much of it as a family but I wanted to try something different…GF Salmon Burgers. At first they did not seem appealing to me whatsoever, but after reading the ingredients and how they were cooked, I decided to give it a try.
I used wild caught Sockeye Salmon, which I drizzled with olive oil and a dash of salt and pepper and cooked on the grill for about 10 minutes. While the salmon was cooking I sauteed red bell pepper and red onion until tender. I let both the salmon and veggies cool for a few minutes. In a bowl with the salmon, red pepper and onion I added Almond flour, Mayo (which was homemade), dijon mustard, garlic, an egg, fresh parsley and dill. Once mixed I formed into little patties and cooked them in avocado oil for about 4-5 minutes each side, until they were a golden brown color.
To accompany the Salmon burgers I made a Red and White Curry Quinoa Salad which included Curry (of course), Turmeric, grated carrots, green onions, red pepper and drizzled with lemon juice and olive oil. I also made a chilled Rice Noodle Salad with chopped up cabbage, GF Tamari Sauce, rice vinegar, green onion, sesame oil and cilantro. The meal itself was delicious but I have to say the Salmon burgers were out of this world delectable I wanted more than one! I will be making them again for sure.
