Mexican Garden Chicken Bowl

This has definitely been a crazy week with all of my sons basketball games but I did find time to make one healthy budget friendly meal. I’m always trying to find new things to make that won’t keep me in the kitchen for hours. This meal was originally supposed to be a Mexican garden salad, but at the last minute I decided to turn it into a bowl. Bowls are probably one of my favorite things to make since you can basically use just about anything, whether it be an all veggie bowl, a burrito bowl and even a Buddha bowl which I still have yet to make.

The first thing I did was make the Cilantro Citrus Vinaigrette since it was the easiest and I wanted to make sure all of the flavors had time to marinate together while I was preparing the other components. It consisted of fresh squeezed lemon juice, olive oil, white wine vinegar, Dijon mustard, fresh cilantro, honey, cumin, salt and pepper. I placed all of the ingredients in a food processor until well combined and then placed in the fridge.

Next, I made the marinade for the chicken which was chili powder, smoked paprika, cumin, oregano, garlic powder, salt, pepper and olive oil. I placed all of the ingredients in a bowl with the chicken breasts and coated evenly. You can either cook the chicken on the stove or on the grill…I decided to go with the grill since the weather was somewhat tolerable. While my chicken was cooking I started to get all of my toppings prepared. Since I had some corn I decided to saute on the stove until slightly charred. I also chopped up cherry tomatoes, avocado, fresh cilantro, thinly sliced jalapeno and red onion. I also had fresh guacamole and Cojita cheese. I also made brown rice to put on the bottom of the bowls.

Once the chicken was finished (I have to admit I did overcook it just a tad ) I sliced it a cubed like shape. I placed the rice on the bottom and then added the chicken with all of my toppings and lastly drizzled the vinaigrette on top. It was simple delicious! I am so glad I decided to do a bowl instead of the salad. This is definitely a keeper. Then only thing I may do different next time is to have the chicken marinate a little longer and then try not to overcook it!
