Dining In on Vacation

While on vacation, I know that some people may not have the convenience of cooking where they are staying, but luckily for me my mom has a house in Colorado. We decided that we would cook at home one of the nights. Since my mom and I were the only ones GF, we thought that the easiest and quickest dish to make would be pasta. I am still trying out different GF pasta brands, so this time we decided to try the Jovial Brown Rice Pasta. To switch things up a bit we also spiralized zucchini noodles to add to the pasta, which added a nice texture.

We made our own homemade sauce using Bionaturae Organic Strained Tomatoes. The sauce was simple to make with just a few ingredients including garlic, salt, pepper, red pepper flakes and fresh basil. It takes only a few minutes to throw everything together and your finished product is a light and fresh tomato sauce. I am still getting the hang of cooking certain GF pasta’s and I have to say this brand turned out great. Not mushy (like I have experienced before probably from cooking too long) and just the right texture. Adding a few basil leaves and fresh grated cheese on top was the perfect garnish for a delicious meal.
