Chicken Shawarma Time

Its no secret that I have a slight obsession with dinner bowls. They are so quick and easy and you can use so many different ingredients to combine together.It can be all veggies or you can add a protein of your choice…whatever you may be in the mood for that day. And it doesn’t hurt that my son and boyfriend enjoy them as well.

This week since its been a bit of a hectic one, I decided to put together a Chicken Shawarma Bowl. The prep time is minimal especially if you can get your hands on a rotisserie chicken which will save you time. I usually get to the organic Rotisserie chicken from Whole Foods. I also used an English cucumber, grape tomatoes, chick peas and chopped parsley. To season the chicken I used a little bit of olive oil, salt, pepper, cumin, paprika and a dash of cayenne just to give it a little spice and mixed that altogether. This time I used Jasmine Rice but you can also use any other GF grain like Quinoa or even Millet. For the yogurt mixture I mixed low-fat plain Greek yogurt, garlic, cumin, salt and pepper and some fresh lemon juice. Voila! You have yourself a delicious and healthy GF bowl and it didn’t take hours to make!
