I’ve never been a huge fan of baking and always found myself getting frustrated. Not sure if that feeling got worse once I became GF, but I felt like everything I made NEVER turned out right. I wasn’t used to using all of the different types of GF flours and I feel like its a little more difficult to bake GF.
Lately though, I’ve been on a little bit of a baking streak. Maybe its due to somewhat cooler temperatures and Fall vastly approaching, or maybe I’ve found a new hobby for myself. Now…I am still no baking pro, just this weekend I tried to make pumpkin muffins and they were a total disaster but I am trying to not let myself get discouraged. I am going to attempt to make them again this weekend and will post how that goes.
On a more positive note I did have two successful attempts, GF Apple Muffins and Oatmeal Raisin Cookies. For both recipes I used the Bob’s Red Mill One-to-One GF flour. Both were pretty simple recipes with not a ton of ingredients. For the Apple Muffins I used granny smith apples, cinnamon, sugar, butter, plain Greek yogurt and vanilla. I also mixed a little bit of cinnamon and sugar to sprinkle on the top. I probably baked them a tad too long but they still tasted delicious.
For the GF Oatmeal Raisin Cookies I actually used the Bob’s Red Mill recipe which included the one-to-one flour, butter, light brown sugar, eggs, sugar, vanilla cinnamon, GF Rolled Oats ans Raisins. These turned out pretty good and even got the approval of my son and boyfriend which is always a difficult thing to get.
