An Easy Weeknight Meal

There’s nothing better than a last minute weeknight meal idea that turns out to be delicious! One of my favorite things about summertime is being able to use my grill. I am no grill master and I usually tend to over-cook my meat but I keep trying because I am determined to get it right. I’ve tried numerous things from BBQ chicken (marinated for 24 hours), pork tenderloin and turkey burgers and no matter what I do they never turn out right…usually dry and not very well flavored.

This week I may have broken the cycle. I decided to keep it real simple with chicken breasts that I seasoned with salt, pepper, oregano, garlic and lots of lemon juice. Cooked them on the grill for a few minutes each side. They were thinly sliced chicken breasts so they didn’t need a lot of time to cook. While the chicken was cooking I roasted red potatoes with salt, pepper, a little paprika and drizzled with olive oil and also made a cucumber salad with heirloom tomatoes. Everything turned out really good and my chicken was actually juicy and very tasty and it was made with just a few simple ingredients. I will definitely be trying a few more things on the grill before summer is officially over!
