In keeping with tradition of having “Pasta Sunday” I’ve been trying to think of different dishes I can make and ones that don’t include melted cheese (my son is not a fan ). This week I decided to try something different that I haven’t had for awhile and I actually don’t think I have ever made…Shrimp Scampi. Super easy, quick and even better I already had a bag of frozen shrimp from Tader Joe’s. Side note: if you have never tried the shrimp from Trader Joe’s its a must! It’s the Uncooked Wild Argentinian Red Shrimp. I was never really a fan of shrimp or buying frozen shrimp but that has since changed. They are delicious and are huge in size! Whenever I am at Trader Joe’s I always make sure to stock up.
For the Scampi I decided to make two kinds of pasta, GF for me and regular for the boys. I know I have been wanting to test out different GF pasta’s but this time I figured a simple GF spaghetti would be best so I used Whole Foods 365 Corn and Rice. While I was waiting for the water to boil for the pasta, in a saucepan I melted butter and sauteed shallots, garlic and red pepper flakes for about 4-5 minutes. While the shallot mixture was cooking I seasoned the shrimp with salt and pepper and then added them to the pan. I cooked the shrimp about 2-3 minutes until they turned pink and then removed them from the pan and kept warm. Next, I added dry white wine and lemon, brought it to a boil and added a little more butter. I returned the shrimp to the pan with fresh parsley and the cooked pasta and seasoned with salt and pepper.
I also made a cucumber salad with grape tomatoes and a simple oil and vinegar dressing and garlic bread. I’ve been craving garlic bread lately, so I used a GF Udi’s hamburger bun for myself. Dinner was a hit and there were certainly no leftovers!
