Meatloaf was never a favorite meal of mine but I am trying to think of different things to make during the week/weekend. The few times that I did attempt to make meatloaf I used ground turkey or chicken which did not get high reviews from my son and boyfriend. That along with cooking it too long and not being very flavorful made me not want to keep attempting to make it. This week I had a change of heart…the new fall temperatures got me in the mood for a little taste of comfort food.
This time I decided to use ground beef ( I used 85% but when I make it again I am going to get 90% instead). I mixed the beef with diced yellow onion, GF breadcrumbs (I used Ian’s panko bread crumbs), unsweetened almond milk, 1 egg, ketchup, Worcestershire sauce, parsley, garlic powder, salt and pepper. I mixed it really well and placed in a loaf pan. For the topping I mixed together ketchup, brown sugar, and vinegar and spread evenly on the top. I baked for about an hour and then let it rest about 10 minutes before serving. It turned out extremely moist, very flavorful and delicious! I paired it with homemade mashed potatoes and green peas. I was a hit throughout the house and even had a request to make it again!
